Making Loaves from Jiffy Muffin Mix

Make a very tasty bread replacement any time cheap and quick. The magic of this you can use powered milk in place of fresh milk allowing you more freedom in a time of crisis.

When it comes to Jiffy corn muffin mixture, pre-heat your oven to four hundred degrees (or if you are using a different mixture then use the temperature level called for by that brand muffin mixture).

Muffin Loaf

Ingredients:

1 package of your preferred flavor of any Jiffy Muffin Mix (apple-cinnamon, blueberry, corn muffin)

In addition to the ingredients listed on the muffin mixture package (such as corn muffins call for 1 egg and 1/3 cup of milk) add the following:

1 tbsp. melted butter or vegetable oil (or coconut oil if the first 2 choices are not available)
1 tbsp. milk
1/3 cup raisins or chopped dried fruit (or 1/4 cup each dried fruit & chopped nuts)
1/2 tsp. baking powder
1/3 cup wheat germ, bran or uncooked multigrain cereal
1 tbsp. brown sugar or molasses
1/4 tsp. salt

Mix dry ingredients together.

Beat remaining ingredients together in a separate bowl, then blend with dry mix.

For best results, let the muffin batter sit three or four minutes and then pour it into two lightly greased 3×5-1/2 inch mini-loaf pans then place in to the oven.

Cook fifteen to twenty minutes or till golden. Let cool and enjoy!
