Yummy Flourless Cornbread

PDF page

Great little recipe for cornbread without needing flour.  It's amazing how versatile cornbread can be as a food stable. It's easy to make, fills you up and doesn't require anything a homesteader or prepper should have on hand already.

2 eggs, beaten (powered is fine)
1-1/2 cups of cornmeal
1 tablespoons of white sugar, molasses, sorghum, or alternatively honey
2 cups of buttermilk or sour milk (To sour milk, put 2 tbsp. lemon juice or vinegar in a pint measuring cup. Throw in milk to make 2 cups. Mix and let stand a few minutes till it's clabbered.)
1 teaspoon salt
1 teaspoon baking soda
1 tablespoons of butter or margarine, melted (or other grease or fat)

Combine the following ingredients.
Mix in liquids.
Spoon into a standard well-greased hot 10 or 12 inch iron skillet.
Cover and cook over a low flame for around a half-hour or till it's stiff in the middle (or cook in the stove at 425 degrees for roughly a half-hour).
Enjoy (share with others if you are feeling nice)
